Rainbow Root Tacos Recipe

       This is my favorite go-to plant based taco recipe. It’s so hearty and comforting! You can always add to them, I add corn, black beans or a meat substitute when I really want extra protein. They’re super affordable and super nutritious. What's not to love?!

Servings 4-6 people 

Cook time 30 - 40 minutes

Ingredients:

  • 4 cloves of garlic 
  • 3 - 4 large sweet potatoes 
  • 4 large avocados 
  • 1 large purple cabbage 
  • 4 bell peppers 
  • 1 large red onion
  • 2 limes 
  • 1 lemon
  • Pack of corn tortillas 
  • Salsa, sour cream, anything you want to top your tacos 

Seasonings+: Season to taste

  • Low sodium sazon (optional) 
  • Garlic powder
  • Smoked paprika 
  • Mrs. Dash table seasonings (green top) or just regular Italian herb blend seasoning 
  • Chipotle (very spicy) season accordingly 
  • Black pepper 
  • Salt 
  • Honey or agave 
  • Rice vinegar (optional) 
  • Plant based Butter (I use soy free smart balance)
  • Olive oil 
  • Vegetable oil 

Instructions: 

  1. Wash all produce
  2. Dice sweet potatoes into 1 in cubes 
  3. Cut bell peppers, onion, cabbage into smedium sized shreds
  4. Remove thick cabbage core pieces from cabbage 
  5. Mince garlic 
  6. Preheat oven to 400F

Prepare cabbage

In a large bowl add: 

  • 2 tbsp. Olive oil 
  • 1 tbsp. of rice vinegar 
  • Garlic powder
  • Sazon seasoning 
  • Smoked paprika 
  • Salt & Pepper 

Massage the ingredients into the cabbage leaves until completely saturated then set aside. 

Prepare sweet potatoes 

  • In a large bowl add: 
  • 2 tbsp. of soft butter 
  • 1 tbsp. of honey or agave
  • 1 tbsp. of olive oil 
  • 4 Garlic cloves or powder ( I do both) 
  • Chipotle powder
  • Mrs. Dash seasoning/ Italian seasoning 
  • Smoked paprika 
  • Salt & Pepper

Pro tip: Make sure the potato cubes aren't too big because it affects the cook time.  

Massage the ingredients into the potatoes, until completely saturated.

  1. Lay them out evenly on the pan and place in the oven.
  2. Set a timer for 20 minutes 
  3. Check on them at the 15 minute mark, I like mine a little crispy so I add a extra five minutes  

Cook Veggie blend

  1. Turn stove on medium- high heat
  2. Add cabbage first and let it cook down for 10 minutes 
  3. Add bell peppers and onions and stir until they’re at the bottom of the pan to be cooked thoroughly 
  4. Once it’s cooked down to your liking, add salt and pepper to taste and add more smoked paprika for a nice smoky flavor.

Prepare Guacamole 

You can make yours however you like but I don’t add any veggies to mine and its still just as good!

  1. Get all the avocado meat in a bowl
  2. Add garlic powder, salt, pepper to taste
  3. Add lemon and lime juice to taste
  4. Then mash it all together
  5. Put in the fridge until it's time to use 

This last step is optional but to me it just tastes a lot better and is easier to build the taco when you fry the tortillas. 

Fry Tortillas

  • Turn stove on medium- high heat 
  • Get a small pan 
  • Add a little vegetable oil 
  • Add tortillas and cook till golden around the edges on both sides 
  • Pat with paper towel to soak up any excess oil 

 

Plate your tacos as if the sweet potatoes were the meat and the veggie blend is the cheese, Add all your wonderful toppings and ENJOY!
